This is one of my all time favourite go to recipes. Chipotle Shrimp Tacos are quick, easy and tastes amazing.

To make it extra special we make our own homemade corn tortillas.
Chipotle Shrimp Tacos
- 2 lbs of peeled, deveined shrimp
- 1 chipotle in adobo, chopped
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 tablespoon of brown sugar
- Juice and zest of one lime
I usually rinse and drain the shrimp before beginning, just to ensure it’s clean.

Once thoroughly drained, add butter…

Once all the ingredients are mixed together, set aside for about 30 minutes to an hour.

Serve this on a fresh made, warm corn tortilla with a bit of white rice, salsa, a slice of avocado and a dollop of sour cream.
If you have any left over shrimp, serve it over rice for a quick lunch the next day.
